Chocolate Truffles
Rich, elegant bite-sized perfection! Made with a creamy mixture of chocolate, cream, and butter to which various flavors are added (nuts, coffee, purees, spices, candied or dried fruits).

- 840 grams of cream
- 84 grams of honey
- 930 grams of dark chocolate
- 55 grams of water
- 140 grams of butter
- 700 grams of cocoa powder
طريقة التحضير
- Scale honey and cream into a pot and bring them to a boil
- Scale half of the dark chocolate into a bowl, and pour cream mix over it
- Whisk until emulsified
- Add butter to the same mixture and blend until all ingredients are well mixed together
- Allow to crystallize in the bowl for a while
- Scoop or pipe the mixture into 10 gms balls on a clean parchment paper
- Refrigerate for 10 minutes and hand roll into round ball shape
- Melt the remaining dark chocolate
- Coat each ball in the dark chocolate and drop on the parchment paper
- Coat again with dark chocolate and drop it into the cocoa powder
- Roll it in the cocoa powder continuously until set
