Chocolate Truffles

Rich, elegant bite-sized perfection! Made with a creamy mixture of chocolate, cream, and butter to which various flavors are added (nuts, coffee, purees, spices, candied or dried fruits).

  • 840 grams of cream
  • 84 grams of honey
  • 930 grams of dark chocolate
  • 55 grams of water
  • 140 grams of butter
  • 700 grams of cocoa powder
طريقة التحضير
  1. Scale honey and cream into a pot and bring them to a boil
  2. Scale half of the dark chocolate into a bowl, and pour cream mix over it
  3. Whisk until emulsified
  4. Add butter to the same mixture and blend until all ingredients are well mixed together
  5. Allow to crystallize in the bowl for a while
  6. Scoop or pipe the mixture into 10 gms balls on a clean parchment paper
  7. Refrigerate for 10 minutes and hand roll into round ball shape
  8. Melt the remaining dark chocolate
  9. Coat each ball in the dark chocolate and drop on the parchment paper
  10. Coat again with dark chocolate and drop it into the cocoa powder
  11. Roll it in the cocoa powder continuously until set
